a speedy supper

Turkey burgers

We are often left in despair, and struggle to find innovative ways of using leftover turkey meat after the Christmas day meal. However, turkey meat is incredibly versatile, as evidenced by the turkey burgers here. These turkey burgers are really moist and delicious. You may find that you will give up traditional beef burgers altogether! The burgers can be topped with your choice of relishes, together with a slice of cheese melted on top. Serve these with sweet potato wedges.

Ready in 40 minutes

 
  • 250g of minced turkey breast meat
  • Half of a small apple, grated
  • Handful of dried cranberries (these can be chopped if large)
  • 1 small red onion, finely chopped*
  • Seasoning to taste (cracked black pepper is great!)
  • 1 tablespoon of dried breadcrumbs
  • Dollop of tomato ketchup
  • 2 ciabatta rolls or brioche burger buns
  • Tomato slices
  • Crispy lettuce
  • Cheese slices of your choice
  • Relish of your choice

In a large bowl, combine the first seven ingredients and mix well. Shape mixture into four 2cm-thick patties and leave in fridge to firm up for about 20 minutes. Heat oil in a large frying pan over a medium heat.

Cook the patties for five to six minutes on each side, or until browned and cooked through. Cheese can be put on the patties near end of the cooking time to allow it to melt.

Build the burger, on the rolls or buns, with tomato slices, lettuce, cheese (if not yet added), together with your preferred relish(es).

* Before adding to the burger mixture, the finely chopped onion can be fried and cooled.
